Hey friends! It’s that time of year again. The weather has gone from over the top heat wave to crisp fall coolness in a matter of two days. Fall in West Virginia happens overnight, and just like that pumpkin spice season is upon us!
Personally I am a huge fan of anything pumpkin, but I am not the sort to run out to Starbucks as soon as I see a couple leaves change color. I prefer to add my own spin on it, like adding a dash of pumpkin spice to my morning smoothie, or adding organic pumpkin to a cup of coffee.
Well today you guys are about to hit the jackpot, because I have the easiest recipe on the planet. Time for some Pumpkin Cupcakes!
This is a picture of the stuff you’ll need to get at the store. I’m not even kidding right now. It’s all you need: 1 can of pumpkin, and 1 box of Spice Cake mix.
Pour the whole can of pumpkin in the spice cake mix and stir it all up until fully combined. Once that’s done, put spoonfuls of the mix in cupcake papers about 3/4 full. The dough will not rise, it’s very dense. Pro tip: Use the back of your spoon to smooth out the tops of your cupcakes. It will be hard to add the icing later if you don’t because the dough is so thick.
Pop the muffin tin in the oven (recipe will make about 12 cupcakes) for 15-18 minutes at 350 degrees. Use a toothpick to be sure they are cooked through.
Now all you need to put together is the easiest, most delicious icing ever. Cinnamon buttercream! The combo of this cake with this icing is absolute perfection. Here’s what you do:
In a large bowl, mix (with a hand mixer or large table mixer) beat 1/2 cup of softened butter until fluffy. Slowly add 2 cups of powdered sugar. Once you get all the sugar incorporated add 2 tbs of milk and 1 tsp vanilla extract. This will bring the icing together. Lastly, add 1 1/4 tsp cinnamon. Mix well.
Use this recipe for any fall event you go to, and they will be the hit of the party! Sorry I didn’t get great pictures- they were all eaten by the time I got my camera out. Happy Fall!
